Creamed Okra & Rice

Ingredients
- 2 Tbsp. butter
- 2 Tbsp. onion, minced
- 1 garlic clove, minced
- 1/2 c. okra, diagonally sliced
- 2 oz. prosciutto, minced
- 1/2 c. grated zucchini
- 1/4 c. grated carrots
- dash of kosher salt
- dash of thyme
- pinch of ground pepper
- 1/2 c. vegetable broth
- 1/2 c. heavy cream
- 1/3 c. grated Parmesan cheese
- 1 c. rice, cooked
Instructions
In a large skillet, melt butter.
Add onion and garlic, sauté.
Add okra and cook for 1 minute, stir to prevent charring.
Layer the remaining ingredients listed above except the cooked rice.
Cover and simmer over medium heat for 8-10 minutes, until most of the liquid is absorbed.
Remove from heat and fold in cooked rice.
Just before serving, stir in cheese.
Sprinkle with minced prosciutto, Parmesan cheese, and/or parsley.
