Creamed Okra & Corn

This recipe was shared as part of my Quick Dinner series on Instagram. These dinners can be made with minimal ingredients in under 20 minutes, using what I keep stocked in my kitchen.

Ingredients

  • 2 Tbsp. butter
  • 2 Tbsp. onion, minced
  • 1 garlic clove, minced
  • 1/2 c. okra, diagonally sliced
  • 2 oz. prosciutto, minced
  • 1/2 c. grated zucchini
  • 1/4 c. grated carrots
  • dash of kosher salt
  • dash of thyme
  • pinch of ground pepper
  • 1/2 c. vegetable broth
  • 1/2 c. heavy cream
  • 1/3 c. grated Parmesan cheese
  • 1 c. rice, cooked
 

Instructions

  1. In a large skillet, melt butter.

  2. Add onion and garlic, sauté.

  3. Add okra and cook for 1 minute, stir to prevent charring.

  4. Layer the remaining ingredients listed above except the cooked rice.

  5. Cover and simmer over medium heat for 8-10 minutes, until most of the liquid is absorbed.

  6. Remove from heat and fold in cooked rice.

  7. Just before serving, stir in cheese.

  8. Sprinkle with minced prosciutto, Parmesan cheese, and/or parsley.
