Over the years, salads have become quite a vital part of our diet. As the importance of a balanced diet and good nutrition continue to be emphasized more and more every day, the appearance of salad with a meal or as a meal becomes more common. The variety of salads that can be prepared make serving salads every week more satisfying than monotonous.
Whether it is summer or winter, spring or fall, chicken salad is always in season.

Ingredients
- 1 c. chicken, cooked and diced
- 1 c. celery, chopped
- 1 Tbsp. onion, minced
- 2 Tbsp. lemon juice
- ¼ tsp. salt
- ¼ tsp. pepper
- ¼ c. chopped pecans
- ¼ c. mayonnaise
- 4 mushrooms, sliced
- 2 Tbsp. breadcrumbs or panko
Instructions
Preheat oven to 350°.
In a medium bowl, mix all ingredients except bread crumbs.
Spoon mixture into two (2) ramekin cups. Sprinkle with bread crumbs. Bake for 25-30 minutes.
Remove from oven and serve while hot.
