Onion Three Cheese Pie

Ingredients
- 9” Pie crust
- 2 Tbsp. melted butter + 2 Tbsp. olive oil
- 2½ c. sliced onions
- 1½ c. milk
- 3 eggs, slightly beaten
- 1 tsp. salt
- ¼ tsp. pepper
- ½ lb. cheese finely grated (2 c. smoked gouda, 2 c. gruyère, 2 c. medium cheddar)
Instructions
Place pie crust in baking dish. Set in refrigerator until ready to use.
Preheat oven to 325°.
Over medium heat, melt butter in a large skillet. Pour olive oil in skillet to heat.
Sautè onions in butter & olive oil until light brown and tender; spread over pie crust in layers.
Scald milk; add to eggs, stirring constantly. Stir in salt, pepper, and 1 cup of each cheese. Pour over onions.
Sprinkle remaining cheese over onion mixture in layers.
Bake for 50 to 55 minutes. Garnish with parsley
