Pumpkin Spice Sugar Cookies

Ingredients
For the Cookie:
- 2 c. all-purpose flour
- ½ tsp. baking soda
- ½ tsp. cream of tartar
- ¼ tsp. salt
- ½ tsp. nutmeg
- ⅛ tsp. ground cloves
- 1 tsp. ground cinnamon
- ¼ c. salted butter, softened
- ¼ c. vegetable oil
- ¼ c. pumpkin puree
- ½ c. granulated sugar
- ¼ c. brown sugar
- ½ tsp. vanilla extract
- 1 large egg, room temperature
For the Maple Glaze:
- 1 c. powdered sugar
- ¼ c. whipping cream
- 1 tsp. maple flavor
Instructions
Preheat oven to 375◦F
Line cookie sheet with a baking mat or parchment paper.
Sift flour, baking soda, salt, and spices in a bowl; set aside.
In a large mixing bowl, add butter, vegetable oil, sugars, and pumpkin puree. Mix until well incorporated.
Slowly spoon in dry ingredients.
Break the egg in a small bowl and beat with a fork. Pour in egg.
Stir the mixture until all ingredients are well combined.
Using a small cookie scoop, spoon dough onto the prepared baking sheet.
For a flatter cookie, use the back of a spatula to slightly flatten the cookie down. If you want a thicker cookie, do not flatten the tops.
Bake for 7 to 10 minutes, until cookies reach the desired level of done. Cookies will be soft.
In a small bowl, whisk together glaze ingredients. Gradually add the whipping cream, until the mixture reaches your desired consistency.
Once the cookies have cooled, glaze the tops.
