Pumpkin Spice Sugar Cookies

Ingredients

For the Cookie:

  • 2 c. all-purpose flour
  • ½ tsp. baking soda
  • ½ tsp. cream of tartar
  • ¼ tsp. salt
  • ½ tsp. nutmeg
  • ⅛ tsp. ground cloves
  • 1 tsp. ground cinnamon
  • ¼ c. salted butter, softened
  • ¼ c. vegetable oil
  • ¼ c. pumpkin puree
  • ½ c. granulated sugar
  • ¼ c. brown sugar
  • ½ tsp. vanilla extract
  • 1 large egg, room temperature

For the Maple Glaze:

  • 1 c. powdered sugar
  • ¼ c. whipping cream
  • 1 tsp. maple flavor
 

Instructions

  1. Preheat oven to 375◦F

  2. Line cookie sheet with a baking mat or parchment paper.

  3. Sift flour, baking soda, salt, and spices in a bowl; set aside.

  4. In a large mixing bowl, add butter, vegetable oil, sugars, and pumpkin puree. Mix until well incorporated.

  5. Slowly spoon in dry ingredients.

  6. Break the egg in a small bowl and beat with a fork. Pour in egg.

  7. Stir the mixture until all ingredients are well combined.

  8. Using a small cookie scoop, spoon dough onto the prepared baking sheet.

  9. For a flatter cookie, use the back of a spatula to slightly flatten the cookie down. If you want a thicker cookie, do not flatten the tops.

  10. Bake for 7 to 10 minutes, until cookies reach the desired level of done. Cookies will be soft.

  11. In a small bowl, whisk together glaze ingredients. Gradually add the whipping cream, until the mixture reaches your desired consistency.

  12. Once the cookies have cooled, glaze the tops.
