Chicken Avocado Sandwich

Ingredients

  • 1 Tbsp. olive oil
  • 3 Tbsp. onion, chopped
  • 1 tsp. curry powder
  • 1 chicken breast fillet, cooked and cubed
  • 3 oz. cream cheese, softened
  • 1/4 red bell pepper, sliced
  • 1 half small avocado, sliced
  • ground black pepper
  • 2 sandwich buns (bread of choice)
  • 2 slices Asiago cheese
  • butter lettuce
  • tomato, sliced (optional)
 

Instructions

  1. Heat oil in a skillet. Cooking onion and curry powder for 4-5 minutes or until onion is soft. Transfer the onion mixture to a bowl and set aside.

  2. Add chicken to skillet and heat for 3-5 minutes. Remove and transfer to bowl with onion mixture.

  3. Add cream cheese, red pepper, and avocado to the bowl. Mix well to combine. Sprinkle with black pepper.

  4. Toast the bread.

  5. Build the sandwich up starting with the bottom slice of bread, top with cheese slice, lettuce, and tomato. Spread chicken-avocado mixture, and place bread slice on top.

  6. Serve with mixed green salad, grapes, or your favorite chips.
