Cookies & Cream
On Christmas Day, my entire family usually gets together for a family feast. We start around lunchtime and typically do not say our goodbyes until well after dinnertime. There's always one dish that we can count on being placed on the dessert table-Cookies & Cream.
We refer to this dish as Cookies & Cream as opposed to banana pudding because the family members who do not care for bananas far outnumber those who do.

Ingredients
- 1 c. evaporated milk
- 1 c. milk
- 3 Tbsp. flour with ⅛ tsp. salt
- 1 c. granulated sugar
- 4 egg yolks
- 3 Tbsp. butter
- 1 tsp. vanilla extract
- 11 oz. cookies
Instructions
To make the cream, we will be using a double boiler. Bring a large pot with 3-4 cups of water to a boil on the stove.
Combine sugar, flour & salt in a medium saucepan.
Mix in slightly beaten egg yolks.
Place saucepan in pot of boiling water, stirring the mixture constantly until thickened.
Allow to cool for 15 minutes.
Line cookies in the bottom of the serving dish. Layer with cream. Repeat until all cream has been used, ending with a layer of cookies on top.
