Rich Peach Simple Syrup

Real food means food that's closer to nature. And with summer here, juice and other beverages get a lot sweeter thanks to all the fruits in season, particularly peaches.

We all know how to make simple syrup, but when it comes to making cocktails, I opt for a rich simple syrup because the thicker texture provides for a more full-body and flavor-filled cocktail. So, for this season's batch, I crafted a simple peach syrup by adding agave nectar. Using agave nectar helps reduce the glucose and glycemic index levels of the concoction, which may be ideal for their blood sugar.

Ingredients

  • 4-6 large peaches, pitted
  • 1 c. granulated sugar
  • 2/3 c. agave nectar
  • 1 c. filtered water
 

Instructions

  1. Thoroughly wash peaches and dice, leaving the skin.

  2. Combine sugar and water in a saucepan, then add in diced peaches. Stir in agave nectar.

  3. Heat contents in the saucepan over medium heat, occasionally stirring until the sugar has dissolved.

  4. Bring the mixture to a boil. Allow boiling for 2 minutes until peaches are tender. 

  5. Reduce heat to low and allow to simmer for 10 minutes, then remove from heat.

  6. Allow syrup to cool for up to 2 hours before handling.

  7. Strain syrup using a fine mesh strainer and decant it into a container for storage.

  8. You may keep the simple syrup may in the refrigerator for up to 2 weeks.
