Smoked Oxtail Flatbread

Ingredients
- 3-5 smoked oxtails (dependent on size), deboned & diced
- 4 tomatoes, cut in half
- pizza crust
- fresh mozzarella, grated & shredded
- 1 c. arugula
- teaspoon olive oil
Instructions
Saute tomatoes in oxtail juice. Set aside.
Even spread grated mozzarella on pizza crust.
Layer sauteed tomatoes on top of the cheese. Add on oxtails.
Bake in the oven, directly on the rack, for 6-8 minutes, until cheese is melted. Remove.
Toss arugula in olive oil and place on top of the pizza.
Lightly shred additional mozzarella, to your liking.
Slice and enjoy.
